(268 posts)6. My grandson is allergic to eggs, so I learned to use a good substitute in baking.
Flax egg: Mix one Tablespoon ground flax seed with 3 Tablespoons of water. Stir well and let sit for at least 20 minutes. Use in place of eggs in any baked goods, or pancakes, meatballs, etc. in a one to one substitution. Found ground flaxseed in the grocery in baking section with flours. Store it in the refrigerator.
