We're going to have some eggplant!

There's two more buds on that plant too.

Very excited about this. I had doubts because I was late getting things into the ground.

I've got two plants out there that are pretty heavy with eggplant. I've never been crazy about fried eggplant, but apart from putting the chunks in spaghetti sauce or making baba ganoush, I really don't have any ideas about how to cook them.

cut them the long way, scoop out the seeds, par-cook them and fill them w/ a stuffing made w/ rice, ground sausage, mushrooms, diced peppers & onions, garlic, basil... and then melt some provolone or mozarella cheese on top of them. A complete meal in one dish.

If you're avoiding carbs, omit the rice or use cauliflower.

I love the purple flowers and the way the eggplants shine. But i can’t touch the leaves with bare arms because of allergy.

Peel and slice the eggplant then lightly salt slices and put between paper towel to draw out moisture before layering in casserole.

I have 6 eggplant plants in garden because come in 6-packs at nursery.

Like to cook ratatouille or fried eggplant garlic parmesan as simple to make for myself.

It’s like a thick soup or stew using eggplant, tomatoes, celery, red peppers, zucchini …. It was designed to use up late harvest vegetables. You can find lots of recipes for it if you Google “ratatouille”. Bonus is that it is meatless and very filling.
