I'm no foodie so prolly am the last to hear of this. Firstly, evening snacking on whatever is supposed to be a no-no for glucose-exaggerated-me, and can go weeks depriving myself but sometimes *lapse* under the "scientific experimentation" disguise a.k.a. what-can-I-get-away-with. Almost all of the cheats result in shattering next-morning test results. But unlike other snacks, a recent cheat utilizing two slices of cheese/bread did *not* go sky high glucose spike the morning after!
But was shocked by this vid about *MAYO* and gave in to the unleashed curiousity, so tried it - confession, more for succumbing to the evening snack mortal sin. Caveat, yes whole grain slice, retail "cheese" and no frills non-added ingredients and toasted in a toaster oven (gasp). Well, the video's chef seems non-judgmental since his physical density hints at succumbing to temptations.
*** Results: Crunchy, tasty. Good enough at my level.

(3,353 posts)I have done mayo, or mustard or even salsa on grilled cheese.
Does take it up a tasty notch. But sometimes, just a plain old bread, cheese and butter grilled cheese is best.

(75,928 posts)I use 4 different cheeses on my grilled cheese sandwiches and one of those will be chosen to be plenty creamy that I don't need extra creaminess.
I also cut VERY thin tomato slices to put in the sandwiches, so I don't want anything else to make them "wet".

(77,102 posts)and was surprised about this dude's use of mayo. From the surprise, came curiousity about what the mayo would be like, and my outcome was satisfactory without reference to butter/mayo, no difference to my non-gourmet palate.

(1,121 posts)Instead of using Mayo on the outside of the bread, I spread it on the inside like a regular sandwich. I then sprinkle some All Spice on the Mayo and lay two slices of cheese on top of the Mayo and cook on low heat. The cheese melts and mixes with the Mayo making a creamy combination.
Everyone I've served this to loved it and wanted to know how I did it. I explained and they were surprised how simply it was.
