My version is ultra cheesy.
I use 5 different kinds of cheese. No way to not be super cheesy with 5 slices per sandwich.
I also grill them (actually pan cooked) pretty hot so I throw them in at 180° over for about 15 minutes after the bread is done to get all the layers melty.
I also add a very thinly sliced tomato to them before I cook them.
I always make a tomato bisque with them.
Maybe I'll do that tomorrow & just celebrate the "holiday" a day late.

Closer to summer I hope to make a great cold lentil salad (cook the lentils obviously)...but grilled cheese will be my first effort.

I'll have to look for a good country white bread. It'll be extra sharp cheddar. Or I love pumpernickel gc!
I don't mix my cheese, but the other options since I could make 2 at a time, and then do 2 more another time would be Swiss cheese, regular provolone maybe with a bit of aged provolone added, and manchego.

one has a great German deli handy!), or pepper jack (or other hot cheese) on sourdough spread with roasted garlic/onion jam on one side inside. Sweet butter, of course. Six-grain bread (my local patisserie), extra sharp white cheddar. . .

my own version, in order to keep cholesterol down.

Whole grain bread. Hellman's olive oil mayo spread on the inside of the sandwich. Low fat sharp cheddar, sometimes low fat Mexcan blend with the cheddar. Sometimes pickle relish added to the mayo spread. No butter on the outside. Sometimes Smart Balance butter in the inside instead of mayo.

Place the sandwich on a plate and heat it in the microwave about 20 seconds or until the cheese melts. Tastes good and I feel guiltless eating it.

I strongly recommend using two kinds of cheese (one which melts well, like processed individually wrapped slices) and really, really good bread, and only use real butter.

It's then blended with emulsifiers and water and remelted to melt smoothly. Like everything else, there's a variation in quality. Some are crap and some are fine. Cheese that melts well is wonderful in grilled cheese sandwiches. Sure, you could blend sharp or medium cheddar with brie or camembert, but that gets pricey really fast.

Just add one slice of individually wrapped cheese - pick your favorite - with a slice of something real, like gouda or Swiss. You'll have a good sandwich. If money is no object, Havarti is nice.
