The plant's current capacity of about 15 head per day is far less than such major meatpackers as Tyson or Excel typically slaughter in an hour at Lexington, Schuyler and other sprawling locations.

But VanderWey and his neighbors have their collective eye on quality, meaning no growth hormones, no antibiotics in the feed supply and dry aging for 14-21 days to improve the taste and tenderness of steaks, roasts, ground beef and other mealtime fare.
