What operating system are you using? Mac, Windows, ChromeOS, or something else?

Regardless, just search (Google!) "default search engine setting [ADD YOUR OS HERE]" and you should be able to ensure it doesn't happen again.

Also, are all your devices synced so that they all have the same settings? Check that too.

I go to settings in Google Chrome and change my default search engine.

Some time later, a search from Chrome will return Yahoo results.

Before restarting I had set Google as default and thought I deleted Chrome Search.

the default settings in Windows itself. Those settings tend to override users preferences. In this case look also at settings in Internet Explorer or Edge. Also check the list of installed programs for anything from or related to Yahoo. If there is something listed there uninstall it if you don't need it.
