GRUYERE MASHED POTATOES (a GREAT cheese, from a lovely village!)
Ingredients:
3 pounds russet or Yukon Gold potatoes, peeled and cut into chunks
4 tablespoons unsalted butter
1/2 cup heavy cream (or milk)
1 cup shredded Gruyere cheese
1/4 cup sour cream
2 cloves garlic, minced (optional)
Salt and pepper to taste
Fresh chives or parsley for garnish (optional)
Instructions:
Cook the potatoes: Place the potato chunks in a large pot and cover them with cold water. Add a pinch of salt to the water. Bring the potatoes to a boil over medium-high heat, then reduce the heat and simmer until the potatoes are tender, about 15-20 minutes. Drain the potatoes well.
Mash the potatoes: Return the drained potatoes to the pot or a large mixing bowl. Add the butter and heavy cream, and mash the potatoes using a potato masher or hand mixer until smooth and creamy.
Add the cheese and sour cream: Stir in the shredded Gruyere cheese and sour cream, mixing until the cheese is fully melted and incorporated into the potatoes. If using, stir in the minced garlic.
Season: Taste and season the mashed potatoes with salt and pepper to your liking.
Serve: Transfer the Gruyere Mashed Potatoes to a serving dish. Garnish with fresh chives or parsley if desired, and serve hot.
