Related: About this forumPotato soup. Why haven't I thought of this before?
Today has been chilly, windy and damp. I decided that potato soup would hit the spot. I had one russet potato and some Yukon golds, so I used both. The Yukon golds kept their shape, but the russet broke down and thickened the soup and made it really creamy.
I finished it off with some half and half and a big spoonful of cream cheese spread with onion and chives. Really hit the spot.

I had a couple strips of bacon from breakfast that I added and a little bit of smoked Gouda.

If you cube the potatoes they wont breakup since you dont have to cook as long
