What's for Dinner, Sat., March 22, 2025

Lamb shanks seasoned with rosemary and garlic. Slow cooker; very tender.

Pureed cauliflower with parsley. Kind of a stand-in for hot mashed potatoes.

Blueberry basil kombucha.

Hot Earl Grey tea.

When in Boston, eat lobster, when in Seattle, eat fish, etc etc when in Memphis, and I've been there many times, (LilBit StJudes)
Find the smallest hole in the wall restaurant , and eat the best BBQ, ever. Stay away from the main streets and chain places.
Koz, now stuck in Fla, because MrsK wanted to move here. I miss Tn.

8. Steamed veggies and tofu

Today I start my annual 4-6 week diet to shed the weight I’ve gained since the fall. I’ve been doing this for many years so I kind of look forward to the challenge. This year it’s 14 lbs I’ve gained since September 1st, but it will be gone soon enough. So beginning today it’s steamed veggies and tofu for dinner until the weight is gone. I put tamari sauce or balsamic vinegar on the veggies, sometimes fresh and dry herbs with a bit of evoo. Boring, I know, but very few simple carbs and no sugar until the weight is gone. I’ll be posting again in a month or 2. Cheers!🥂

gain 14 lbs when I read the kinds of foods you have. Always super healthy.
I don't even diet and I still lose weight because of 3 things: 1) small portions; 2) gardening work; 3) usually no food after 7 p.m, sometimes earlier.

On the first one, I tell myself a small portion and then I can have something else for variety later. The "new" thing gets me every time. It could be somethihg like Brie and an apple slice or two. For whatever reason, just a little food satisfies me and then I don't want anything else.

Well, we will miss you. Stop by and say hi now and then.

I put on the weight because of what I eat after dinner…lol. There’s a direct ratio between how much sunlight we lose in the fall and how much snacking I do in the evening. World Series, football season, the major holidays are all opportunities for me to indulge in too much snacking. Most of my extra weight is because I eat too many nuts and popcorn in the evening and I wind up eating more calories than I burn off even though my activity level is similar to warmer months. Happens every year. Once spring comes around my eating habits change and I work to shed this “nut weight”. It will come off and I will be back! Cheers!🥂

I’ve had a package of TJ’s Tteok Bok Ki—spicy rice cakes—in the freezer for months. In retrospect, I suspect they predate Hurricane Milton and most likely thawed during days of no electricity and were then re-frozen. And moved. And ignored for months.

Finally decided tonight was the night to try them out. I chose to airfry rather than do them in a skillet, thinking I’d prefer them a little crispy on the edges.

Nope. Largely inedible, though the sauce is good. Wish now I’d just thawed them *in* the sauce for 10 minutes so they’d absorb the sauce. They’ll now sit in the fridge trying to soften up (or be forgotten for until tossed out…) and my son is making me some pasta instead (and using the Korean sauce on his own dinner).

This will keep me from going apeshit at the supermarket for a good while, I suppose. Sometimes, it doesn’t pan out when I get adventurous. *sigh*

(I put cheese and pickles on my Sloppy Joe, kind of like a cheesy pulled pork sandwich)
