I'm excited about my Mediterranean menu tonight!
Baba Ganoush. I put an eggplant in the slow cooker. Now I just have to mix it up with the garlic, tahini, olive oil, cumin, parsley, etc.
In addition, beef kofte. I wish it could be lamb kofte but I can't go to the store now so I decided to roll the meatballs in a mixture of onion and garlic, plus coriander, cumin, and paprika.
Cucumber tomato salad using fresh parsley from my garden.
Warm pita breads.
Tangerine kombucha.
Dessert: Klondike ice cream bar. I was craving chocolate so I bought a lot of them!

Like most Orthodox, I'm doggone ready for Lent to be over. Even with the dispensations of illness (last week, and I mostly didn't feel like eating anyway) and traveling (the two weeks before that) I tried to stick to the fast. But I am heartily sick of being vegetarian when I'm not normally, even with occasional fish! If you want a good description of how some of us feel about now, read the chapter in Frederica Mathewes-Greene's book Facing East rhat describes a grocery shopping trip with her teenagers just before Pascha (Easter). The first time I read it I laughed so hard I woke my late ex up.

I made some cheese cake dip to have with some graham crackers.

A Food Lion personal blueberry pie - no sugar added. Only four grams of sugar from the berries. Lots of fat in the crust. A treat for me.
The pup likes salmon very much.

(722 posts)I'm trying to find uses for the pepperoni I'm storing, so I adapted a recipe for spaghetti with salami from the internet. Only I used penne with pepperoni.
It's a keeper. I cut the proportions in half, to start with, then doubled the pepper flakes and Parmesan. Minor changes to the technique. Halfway through, I realized that it's related to Cacio e Pepe, a thing I enjoy in restaurants and have never yet made successfully. But this time it worked.
Cheap, fast, easy and good.

(11,051 posts)chop up fine and put in a sauce, cut into ribbons and add to a salad, make a hoagie-type sandwich by putting a layer of pepperoni on a small loaf of bread, then adding tomatoes, lettuce, giardiniara (which I never can spell), some cheese, and putting under a broiler for a few minutes, or eat on crackers either with or without cheese. It's also good in cold pasta salads.
Pasta cacio e pepe is good: I'm currently 1 for 1 on getting it right.
Retrograde
(11,051 posts)sauteed to get the skins crispy, then cooked on a bed of sprouting broccoli, with rice. I had a reason to stop by my favorite produce place today and stocked up on vegetables: tomorrow's dinner or lunch is leftover chicken with a celeriac salad.
