What's for Dinner, Mon., July 21, 2025

Eggplant sandwich with chipotle mayo and mozzarella on crusty bread.* I bread the eggplant with an herby mixture.

I'll probably grill a few sweet peppers, too. Optional to add one of those.

For crispiness, I'll have tomato cucumber salad with basil. A tablespoon or two of Caesar dressing and lots of freshly ground black pepper.

Dessert: small serving of coffee ice cream and a shortbread cookie. Has to be small 'cuz the coffee would keep me up all night.

Story behind the sandwich. I once had a kitchen contractor who was a vegetarian. I felt so sorry for the guy because he would go to Burger King for lunch and order lettuce, tomato, and onion on a bun.

I asked: that's the best you can do for a vegetarian sandwich? Poor guy looked at me like I was from another planet. I said I'll make you a vegetarian sandwich you won't forget. I made this one. He liked it so much he asked if I would make him another one the next day.

Pretty soon he was stringing my job out. He would arrive about 10 and oh look at that, it's almost time for lunch. Sure would be nice to have an eggplant-mozzarella chipotle sauce sandwich.

That'll teach me to "show" a person what a good vegetarian sandwich is.

5. Lentils with cabbage

too hearty to be a soup

brown lentils
cabbage
onion
carrots
tomato (had 1 overripe medium size chopped up)
ham chunks
ham stock

Seasonings: Garlic and oregano and a Italian mix (oregano, sage, thyme, rosemary and ?)

I would make this differently next time with more tomato and no carrots perhaps adding bell pepper. It would be good without the ham as well.

During the prep I offered Ducky a rib from the cabbage. Sniff, sniff. What's this? Lemme take it away now! Crunch crunch crunch. Skitter, skitter, gimme more! I didn't give him more because I wanted to be sure it agreed with his tummy. He'd be happy if we served him a veggie plate with broccoli, baby carrots, and maybe cabbage ribs.

Summer in a bowl - - - Roasted fresh corn, potatoes, tomatoes, seared Windy River spicy Italian Sausage

AND Summer Salad: Mixed greens, red cabbage, chick peas, pea shoots, cucumbers, whipped avocados, blueberries, pumpikin seeds, lemon Tahini vinaigrette

NOW, I'm waiting to see what's available.

10. Tofu "Egg Salad" baguette sandwiches

Press the water out of a block of firm tofu and mash. Mince red onion, shallots, celery, sliced radish and black olives. Mix the tofu and veggies with vegan mayonnaise, Jax Tofu seasoning (or nutritional yeast), Dijon mustard, sweet pickle relish and chopped fresh parsley. I put a good helping of tofu salad on a split multigrain baguette bottom and melted Violife “cheddar” cheese on top in the microwave. Romain lettuce and sliced tomato to finish the sandwich. Chana masala (spiced garbanzos in an onion-tomato sauce) and paneer tikka masala (sauce from a jar because I don't really want to know how much butter there is in it), with rice and Indian pickles. I still haven't been able to get the spices near to what my fav Indian restaurants do, but getting closer.

with a gorgeous salad on the side made w/ some red leaf lettuce we got ot the farmer's market on Saturday.

Meatballs were good... sauce seemed tart. Maybe it will be better as leftovers tonight.
