What's for Dinner, Mon., Oct. 27, 2025

Posting early due to working late.


Creamy Fish Chowder. Mollie Katzen recipe, which has white fish (I'm using flounder and adding shrimp, too). Carrots, celery, potatoes, zucchini, bay leaf. Vegetable stock and half n' half.

Ciabatta rolls, toasted with butter and garlic in the air fryer.

Kombucha: pineapple ginger.

Dessert: White cake, which I baked in my air fryer oven last night. I like it just plain, but I'll probably put raspberry Greek yogurt over it. I added the fresh raspberries to the yogurt. Toasted sliced almonds on top.

Flounder filets, floured and sautéed in butter, white wine and capers. Served with roasted small red potatoes and a spinach salad. Louis Jadon Chardonnay.

Since the cookbook I took it from is New Recipes from Moosewood Restaurant, p. 167.

Healthy Low Fat Fish Chowder
1 tbsp olive oil
1 cup diced onions
1/2 cup diced celery
1/2 cup diced carrots
2 cloves minced garlic
4 cups low-sodium chicken broth (Mollie uses bet broth)
1 lb cod fillets, cut into chunks
2 cups diced potatoes
1 cup skim milk (if you want to make it richer, use 1/2 'n half)
1 tbsp cornstarch
1/2 tsp salt
1/4 tsp black pepper
1 tbsp fresh parsley, chopped (Mollie uses marjoram & dill)
Instructions
Heat 1 tbsp olive oil in a large pot over medium heat until shimmering.
Add 1 cup diced onions, 1/2 cup diced celery, and 1/2 cup diced carrots. Cook for 5 minutes, stirring occasionally, until vegetables soften.
Stir in 2 cloves minced garlic and cook for 1 minute until fragrant.
Pour in 4 cups low-sodium chicken broth and bring to a boil.
Add 2 cups diced potatoes. Reduce heat to medium-low and simmer for 10 minutes.
Gently place 1 lb cod fillets into the pot. Cook for 5 minutes, or until fish flakes easily with a fork.
In a small bowl, whisk together 1 cup skim milk and 1 tbsp cornstarch until smooth. Stir into the chowder.
Season with 1/2 tsp salt and 1/4 tsp black pepper. Simmer for 3 minutes to thicken.
Remove from heat and stir in 1 tbsp fresh parsley.
Best enjoyed hot, this chowder boasts a velvety texture with chunks of tender fish and vegetables. For an extra touch, serve with a sprinkle of paprika or a side of crusty whole-grain bread.

I made enough chili lentils for a second dinner, which is fine with us. Today I’m making mashed potatoes and steamed cabbage with mushrooms as sides. Cheers!🥂

I have an air fryer lid for it, and got stackable pans that fit perfectly. Now you have me yearning to dig out my pineapple upside down cake recipe because it’s so ridiculously easy and delicious…

Not sure if I have a fresh pineapple on hand or even canned, but this will bother me until I scratch this itch.

No clue what dinner’s going to be tonight and I’ll probably be distracted by the dessert aspect until I figure this out.

Not sure if you’re a bad influence or good, TBH.

I have a can of pineapple rings in the frig. Now you've got me thinking!!

I'm not sure about your influence, either, LOL.

I have those same type of stackable pans. They're a little on the small side, but I don't want a larger cake around. They came with the air fryer. I bought an additional one last night at the dollar store because I need 2. I line them with parchment paper anyway.

The days of baking a big cake are long gone. My son isn’t big on sweets, though fruit gets his interest, but making something bigger makes no sense for a family of two.

I love those pans for Mexican night, too—rice in one pan and beans in another. I also have 8” bamboo baskets I can stack in the IP, too. Really love how versatile the IP is, and with little counter space now, I don’t miss the extra appliances.
