What's for Dinner, Sun., Dec. 21, 2025

Crunchy Cauliflower Soup with Sage Oil.

Tossed green salad with Green Goddess dressing. Green ruffly lettuce, snips off a few pea plants, pear tomatoes, sweet peppers, bright red to a combo of green and red. Red onion, celery, and cucumber.

I might make a few mini sandwiches on party-sized rye with mesquite chicken, melted pepper jack, an onion slice, and tomato pesto.

Kombucha: ginger.

Dessert: light vanilla ice cream with blueberries and angel food cake.

I had a leftover piece of taco chicken, ramen noodles and chickpea tikka masala.

Too late in the day for dessert, but I made a batch of baklava and sampled it earlier.

5. Spaghetti Squash Primavera

Baked the squash while I steam-fried in evoo and veggie broth: chopped onion, orange bell pepper, sliced zucchini and minced garlic. When done I added sliced mushrooms, chopped kale, black beans, cooked sweet peas and halved cherry tomatoes and cooked a little bit longer. I added dried basil, oregano and red pepper flakes. I scooped out the squash “spaghetti” and tossed it with the cooked vegetables. After plating the dish was topped with vegan parm and fresh chopped parsley. Cheers!🥂
