Going out for dinner tonight and I don't even know what restaurant yet.

We stole this from an Italian restaurant in NYC.

Mix cooked shrimp, steamed green beans (cut in half), minced red onion, cubed tomatoes, garlic, olive oil, Balsamic vinegar and season to taste. Add crumbled bacon on top. Served with angel hair pasta with marinara sauce and garlic bread. Chianti and lemon ice water.

The Riba Smith grocery store (muy caro) actually had spumoni ice cream.

don't feel like cooking, though there was a plan for turning leftover baked pork chops into green chile pork burritos. still possible, but someone else in the house will have to do it. LOL

Oxtail Stew!! While oxtail used to cost $2.99 a pound, it's now $8.99. But hey! I'll take oxtail over steak any time.

Broiled to render fat, then added to the crock pot with cubed turnip and potatoes, sliced carrot, thinly-sliced yellow onion, some thyme, salt, and pepper. Pouring over this mountain is a blend of homemade beef broth and ketchup. Finally, the last hour: a slurry of flour and red wine.

And carbs be damned! I served it over wide egg noodles and accompanied it with a quaff of more red wine.

If I were I a cat, I'd be purring right about now.

And yes, clean-up is 85% done.

ar our local County Market grocery store. Warmed some up in the air fryer, and dipped them in honey mustard salad dressing.

I have a salad made up for later.

Steam-fried in evoo and veggie broth: chopped onion, red bell pepper, sliced carrots, mushrooms, zucchini and minced garlic. When done I stirred in homemade marinara sauce, butter beans and cooked chickpea penne. Vegan parm on top after plating. Cheers!🥂
