Chili with sour cream, chopped raw onion, and grated cheese.

Sweet potato fries.

Soda (coke) to drink.

I really was in the mood for a modified version of a recipe I read:

Red lentil jambalaya
I cooked in shrimp. tomato puree with onion, garlic, green pepper. peas, carrots, corn.
olive oil base. vegetable broth
aroma is great.
still simmering.

I also have a side dish of cauliflower and mushrooms in a olive oil garlic and onion baste.

I made enough for a few days of dinners and lunch...

What kind of cheese did you (or Loretta) use on the Philadelphia Cheesesteak Casserole?

At lunch yesterday, I had a Phil. Cheesesteak sandwich and I was disappointed because they put freaking Velveeta on it!!!! Velveeta! I have a friend who goes to Philadelphia every two weeks and every time he comes back, he gets me a PCSand. from a place famed for them. Can't recall name but I will ask again. It is so good and nothing--NOTHING--like the joke of a sandwich I got served yesterday.

in the casserole, and provolone melted on top. Take it from me, it was good!

Salad of spinach, radish, grape tomato, bell pepper, broccoli, etc. with some breaded chicken tenders warmed and sliced on top. A low carb Cesar dressing was used.

For a starter, herring in wine sauce with sour cream and rye toast points.

For after, plain yogurt with raspberries or jumbo blueberries.

Hot decaf Earl Grey tea as well.


TJ and Ducky are abed so I've gotten no ratings from them. It is a work night for her

mashed potatoes and gravy, and sauteed spinach and grape tomatoes with garlic and tamari. Tomorrow is a church potluck, so I spent the morning and early afternoon cooking too: chicken casserole with pasta, spinach and mushrooms; applesauce cake with cream cheese frosting; and coleslaw with peanuts and an Asian-style dressing.
