What's for Dinner, Fri., Feb. 6, 2026


Stuffed yellow, gold, and green peppers.
I have a couple different stuffing mixes:
--Vegetable-chickpea with madras curry sauce
--Beyond sausage with celery, onion, and garlic. Also diced broccoli.
Melted cheese (Swiss or provolone) on top.
Served with quinoa.

Kombucha: ginger
Dessert: grapes and tapioca pudding. Decaf coffee

Not at all a fan of curry, so I'd choose the fake sausage ones.

Just finished chicken & homemade potatoes O'Brien.

I've already got supper cooking on the stovetop... a pot of chili for the cold weekend, before we get the warm up to 70 degrees on Mon! But I'm keeping this in the forefront of my mind... what a perfect way to use those little sweet peppers... thank you!

5. Snap Pea Pasta with Crispy Tofu

Steam-fried in evoo and veggie broth: chopped onion, red bell pepper, sliced mushrooms, whole trimmed snap peas and minced garlic. When done I added air-fried crispy tofu and tossed everything with whole wheat penne. Crumbled seitan bacon and vegan Parmesan on top after plating. Cheers!🥂
