Also, I love how he made a jiang, basically, from pork, onion, hoisin, msg, salt, cornstarch than added the noodles and shrimp after he fried some for the sauce. Could do without the raw egg but the mouthfeel must be amazing. Once again he proves that great fried rice is really about the eggs. What a treat to watch!
