What's for Dinner, Mon., Feb. 2, 2026 [View all]

Chicken-cilantro mini-wontons with hoisin sauce.

Noodles with Thai peanut sauce. The peanut sauce is made with coconut milk and red chili peppers.
I've always made my own and dislike making it because I find peanut butter so difficult to work with, although someone gave me the tip to use the noodle water to make the peanut butter easier to work with.

I found this sauce on my ShopRite smart cart venture a couple nights ago. It's Bowl & Basket, so it wasn't even expensive. Fresh cilantro to chop and sprinkle over the noodles, along with toasted sesame seeds.

Kombucha: peach ginger.

Dessert: a couple caramel marshmallow chocolates. Decaf coffee.
