Brother Juniper's famous coleslaw



Originally popularized by Peter Reinhart in Sacramental Magic in a Small-Town Café, this beloved recipe takes only 6 ingredients.

Ingredients

1 large head green cabbage (cored and shredded as thinly as possible)½ cup finely diced onion (yellow, white, or red)1 ½ cups high-quality mayonnaise (like Hellmann's/Best Foods)¼ cup apple cider vinegar½ cup granulated white sugar½ tsp fresh ground black pepper (or to taste)


Directions

Shred & Chop: Grate or shred the cabbage as thinly as possible and place it in a large bowl with the diced onions.Make the Dressing: In a separate smaller bowl, whisk together the mayonnaise, apple cider vinegar, sugar, and black pepper until the sugar is fully dissolved.Combine: Pour the dressing over the cabbage and onions. Toss thoroughly until everything is evenly coated.Chill: Cover and refrigerate for at least 1 hour before serving to allow the flavors to meld and the cabbage to soften.
