Canadians say "toque" for a winter knit cap because the word comes from French, borrowed from French-Canadian tuque, which itself comes from older French, Spanish (toca), and possibly Arabic/Persian words for headwear, becoming a distinct Canadian term for a knitted hat worn by early fur traders and voyageurs for warmth in the cold climate.
