It's then blended with emulsifiers and water and remelted to melt smoothly. Like everything else, there's a variation in quality. Some are crap and some are fine. Cheese that melts well is wonderful in grilled cheese sandwiches. Sure, you could blend sharp or medium cheddar with brie or camembert, but that gets pricey really fast.

Just add one slice of individually wrapped cheese - pick your favorite - with a slice of something real, like gouda or Swiss. You'll have a good sandwich. If money is no object, Havarti is nice.
